sambal kacang

sy cuba masak 2 versi smbl kacang
xde bnyk beza bhn2nya tp mmg ade sedikit kelainan rasa








VERSI 1
bhn kisar
3 batang serai
1 inci lengkuas
5 ulas bawang merah
2 ulas bawang putih
2sdB udang kering direndam
2 biji buah keras
sedikit belacan
20 to 25 tangkai lada kering (di masak sekejap & cuci bersih)

lebih kurang 1 cwn air asam
garam, gula & gula merah secukup rasa

300gm kcg tanah goreng dikisar (1/2 kcg kisar kasar & 1/2 kcg kisar halus)

Cara2
tumis bhn kisar hingga wangi
masukkan air asam jawa
perasakan dgn garam & gula
masukkan kcg kisar
didih sekejap & tutup api

1st VERSION
ground ingredients
3 sticks lemongrass - roughly sliced
2 cms galangal - peel & roughly sliced
5 shallots
2 cloves of garlic
2 tbsp dried shrimp
candlenut
1tsp shrimp paste
20pcs dry red chilies (less chilies to cut spicy)
*** blended all ingredients with just enough water to make fine paste


3/4 cup of tamarind juice (1 tbsp of tamarind paste diluted with 3/4 cup water)
salt & sugar to tasted
4 tbsp of brown sugar
300 gm ground nut - pound


methods
heat 1/4 cup oil  - saute all blended ingredients till well cooked
add in tamarind juice, brown sugar, salt & sugar to tasted
add in pounded ground nut. cooks till the sambal/sauce a little bit thicked.

VERSI 2
bhn kisar
2sdB udang kering
20 KE 30 tangkai cili kering (di masak sekejap & cuci bersih)
3 bj bawang besar
2 ulas bawang putih
3 biji buah keras
2 btg serai - hiris kasar
sedikit lengkuas
sedikit kunyit - serbuk kunyit pun bole
sedikit belacan
1sdK serbuk jintan manis
1sdK serbuk jintan putih
1sdK ketumbar

300gm kcg tanah goreng dikisar (1/2 kcg kisar kasar & 1/2 kcg kisar halus)

lebih kurang 1 cwn air asam
garam, gula & gula merah secukup rasa

Cara2
tumis bhn kisar hingga wangi
masukkan air asam jawa
perasakan dgn garam & gula
masukkan kcg kisar
didih sekejap & tutup api

SY SUKA KUAH KCG VERSI KE2 NI..MAKAN DGN SATE GORENG...nyum2!!
