MALAYSIA'S FIRST EVER BLOGGER MASTERCHEF

received a phone call on monday around 2.30pm. after a short conversation, run in my mind...is it for real or somebody is trying to play a joke on me? then i tried to get some info from what the caller have told me...all seems true, ahhhh.............. then only i remembered that mama jijah (my FB friend) already ''linked''   me some info about it...it's about last week i thought.........so what is the matter about?? who is the caller??....well, i bet u all already knew it, coz u all can read it from the ''post title''....daaaaa...hehehehehe


the caller is miss fara, from NUFFNANG MALAYSIA, she invited me to enter the contest (as stated as above), i'm still thinked about it till then on tuesday she call me up again, asking and reminded me also that all application should be submit by this THURSDAY..(alamakkkk!!) & invited me again to enter the contest.

my girls already excited & really want me to participate, then, i ''WhatsApp'' dear hubby ..just text  ''Skype please'', then i waited..waited, waited, waited till i fall  zzzzzzzzz...., the next day  by 2pm only i received the answer..(gosh ...sooooo long to get an answer eh)
not only i received an answer  but 4 answers sekaligus!!(texting off course!!)
the fact is me & hubby not in the same zone......anyway he texting saying that i should proceed....bla bla bla bla..& bla bla......( i still not so sure should i participate or not...)..but then i said to myself...just give a try..who knew? as 'pepatah said..tuah ayam nampak di kaki, tuah orang siapa yang tahu'  isn't it?? my dear sweet friends (u know who u are lerr) also encourage me to go!!! yeaaa chaiyok!! chaiyokk!!

again i  go through the 'must do thing' to enter the contest.....one of it is....

''tell us why are you deserve the title by...bla bla bla bla bla......................................''

(pouting)...why eh?? why eh?? ............................................................................................................................................................................................................................................ it a long pause actually ....longer then this dot dot dot line!!!!

my answer is...(i try my very best ok)

i only started as a blogger may 2011, my follower is only 100 plus, so im really sure i'm not a ''popular'' blogger among the bloggest. but seems that NUFFNANG is not looking for the popular blogger..they are looking for the BLOGGER MASTERCHEF...so  i think i deserved it...

well, i'm a homemaker that love to cooks & definitely love love love to eat!!!!
(tiada apa pun untuk dipelikkan...) hehehehe

ok the recipe that i want to shared is a caramel cake ...this is a 'BOOM' recipe back then in (over a year) FB KONGSI RESIPI by PN MUNIRA...and it's still a 'BOOM' till now (masuk TV3 derrr). and as required by NUFFNANG that the recipe must be original creation or a recreation of a famous recipe..so....

I recreated a new version of caramel cake..which is most of us (especially me, hubby & my kids) like to have a THICK smooth sweet pudding caramel.

CAKE CARAMEL - new version of pudding caramel

i recreated a smooth sweet & THICK layer of caramel pudding just to satisfied my own definition of dessert world...(in my own tummy world to be exact)!! ihikss
and i still keep the same recipe for the cake mixture  (slightly changes)

there are 4 parts in this recipe.
first is the caramel sugar, then the pudding, followed by the cake mix &  finally the meringue
let check out the ingredients & step by step pic as below


PART 1 - the caramel

2 tbsp of sugar

add sugar to the 8 x 3 baking tin
direct heat from the stove
melt sugar till it turn to brown
(keep stove fire medium)
- put aside







PART 2 - the pudding

 ingredients
3 yolks - (keep the white egg)
2 eggs
1 cup of condensed milk
1 cup of evaporated milk
1 tsp vanilla essence



methods
combine all & hand whisk

due to cond. milk used , i skipped the castor sugar:))











then strained the mixture into sugar caramel

ignore the ''cracking'' sound that occur when pouring the mixture
it's happen due to the ''clashing'' hot & cold temperature.




PART 3 - cake mixture

ingredients
3 yolks - keep the white
135ml water
3 tbsp cooking oil
1/4 castor sugar
1 1/4 cup flour
1 tsp baking powder
*** sift together baking powder & flour




methods
combine & hand whisk all the ingredients except the sifted flour & baking powder
then gradually  add flour & continue whisk till the mixture well combined.



PART 4 - the meringues


6  white eggs
1/3 cup of castor sugar
1 tsp cream of tar tar




methods

beat egg white till foam
then gradually add in castor sugar , continue beating eggs
add in cream of tar tar , beat the mixture till it turn to the stiffed foam (refer pic below)

**** make sure all your utensils are dry
and yolk are well separately.









pic 4 to 6
then combine meringue with the cake mixture - folded method
at this point u can add what ever flavour as u wish

when the mixture is well combine u can separate them to 2 (or more)
and add in colour as u wish.

meanwhile switch on oven to 170'c





slowly scoop the mixture & pour it to the pudding mixture. the meringue mixture will be floating on the pudding mixture. keep on scooping & pouring the mixture till it finished.





using steam bath / bain marie method, put baking tin with the cake mixture onto the larger baking tin. 
pour hot water into the external baking tin.
(use the very  bottom rack in your oven.)
bake for 45 mins to 55 mins (depends on your oven) - i baked it till 1 hour 20 mins with 160'c...

really not ''INTO'' it coz the caramel pudding come out not as thick as i wished....so i prefer the round type baking tin instead of square type.

mee hoon hongkong

mintak maaf pada pengunjung kerana x update blog & xde recipe baru utk dishare...
nway hari ni selepas make groceries, bergegas masak, & memang dah plan nak masak mee hoon ni pasal ianya lebih kurang kue teow kungfu....lagi pun ringkas & anak2 sure suka coz x payah nak pilih2 lauk, pilih sayur, dalam 1 pinggan semua ade...:))) recipe ni hasil peng'share'an kak KASMA. tqvm kak..:)) sy c&p dlm blog saya yea:))


bahan2 & cara2nya
Mee hoon direbus & toskan airnya
Gaulkan mee hooin dengan sedikit minyak & kicap cair - sy gunakan minyak bijan - ketepikan

Tumis  2 ulas bawang putih yg ditumbuk hingga garing
masukkan bahan2 pilihan (udang / sotong / isi ayam / fish cake & fish ball)
saya cuma masukkan daging sahaja
masukkan sedikit sos tiram, sos ikan (nampla) serbuk lada putih , minyak bijan (sy x letak krn dh letak pd mee hoon tadi) & air secukupnya

bila mendidih baru masukkan bancuhan tepung jagung - utk pekatkan kuah
masukkan sayuran pilihan (lobak, jagung & cendawan juga kailan)
perasakan dengan sedikit garam. tutup api & bolehlah di sendukkan kuah ini ke atas mee hoon yg telah di susun di pinggan.






dan saya juga masakkan  nasi goreng yg dimakan bersama udang tumis sebagai pilihan.

RENDANG PINDANG

assalam semua
hari ni baru ler kira betul duk memasak...setelah agak lama jgk ler x  bersantai2 di dapur. yealah kan dgn open house, klu saya xde open house, anak2 lak ade..so jadiknya mmg x memasak....
hari ni, saya masak rendang pindang recipe dari  fb's fren mama jijah. dr blognya -story to tell. TQVM mama jijah..cha c & p kat blog yea ...recipenya lebih kurang sama mcm masak rendang biasa, cuma x bnyk santan & guna cili padi..mmg sempoiii :))

masa baca note yg mama jijah tag utk saya, sy dh ingat ler step2 dn bahan2nya...tapi kan.....pasal dah lama x masak kan...macam lupa lak kan..ape yg patut di buatnya....klu ikut recipe kena goreng sekejap ayamnya....tp sy x buat ..bila dh masukkan ayam & santan bekatalah dlm hati...alahai dh kering lak rendang ni ayam pulak belum cukup masaknya...baru ler teringat ayam kena goreng dulu!!..ha tu ler pasal...pny ler mentelnya kan...:)))
bukan takat masak rendang ni jer..masak nasi lemak pandan also x masukkan garam...bila dh nk hampir kering nasi tu baru teringat nak masukkan..nasib baik ade garam halus...klu x mmg x serata ler masinnya..:)))



 bahan2
1 ekor ayam (sederhana size)
5 btg serai
6 ulas bwg kecil
6 ulas bwg putih
1 inch halia
1 inch lengkuas
1/2 inch kunyit hidup (guna yg serbuk pun boleh)
4 biji cili api (sy tmbhkan 5 biji lada merah & gunakan 3 biji cili padi)
1 cwn santan (sy gunakan 1 kotak 200ml santan)
2 keping asam keping
daun limau purut & daun kunyit utk hiasan (sy gunakan daun kunyit jer utk hiasan & jg di masak bersama)
minyak secukupnya
1 packet (kecil) kerisik

cara2
ayam dibersihkan & ditoskan - di perap dgn garam & kunyit & di goreng sekejap & ketepikan
kisar bahan2 yg ditaip dgn warna merah
panaskan kuali dgn minyak & tumis bahan kisar hingga wangi & garing
masukkan santan, kacau sebentar & masukkan ayam - masak hingga sedikit pekat
masukkan asam keping, & masukkan kerisik
perasakan dgn garam & gula, masukkan daun limau purut
masak hingga kuah pekat & boleHlah dihidang dgn di taburkan daun kunyit.

NASI LEMAK PANDAN

assalam semua
nak mencuba buat nasi lemak pandan, kononnya nak di''gu''kan dgn rendang pindang ler tu:)))
sy bet semua dh ramai yg cuba masak nasi lemak pandan ni.....yg beshnya bau harum sedapur dengan pandan..mmg ler nyum2:))



bahan2
~3 cawan beras basmati / beras wangi - (di rendam sekejap & di toskan lalu di masukkan kedlm rice cooker)- ketepikan
~1 inch halia tumbuk halus
~8 helai daun pandan  dikisar dgn air secukupnya - dn ditapis.- ambil 2 1/2 cawan air pandan
~3 cawan santan
~garam secukup rasa
~1 helai daun pandan di simpul
rempah tumis - (1 kayu manis, 1 bunga lawang & 3 pelaga)
~1 sdK jintan manis & 1 sdK jintan putih

cara2
panaskan kuali dgn sedikit minyak, tumiskan halia,rempah tumis & jintan manis & jintan putih
masukkan air pandan & santan, masukkan daun pandan...masak hingga didih & masukkan kedalam rice cooker pot yg berisi beras tadi, masukkan garam sekali. masak nasi mcm biasa. (jgn lupa menekan suis pd plug jg menekan butang cook pd rice cooker)

***gunakan cawan sukatan yg sama & jika rasa warna hijau tu x mencukupi bolehlah tmbhkan sedikit pewarna hijau

beef noodles

assalam semua
menu yg saya nk share ni, semalam punya lunch, hr ni lunch cuma keow tiaw goreng jer
saya share recipe yea...xde idea nk menceceh...:))


bahan2
600gm mee kuning - dicelur & tos
2 ulas bwg putih - hiris halus
1 inch halia - hiris halus
1/2 sdK chinese 5 spice
1 sd makan kicap pekat
300gm daging (bahagian lembut supaya senang masak)
1 kiub perasa daging / ayam
air secukupnya
garam & serbuk lada sulah secukupnya
sayuran pilihan seperti lobak,celery etc
***klu ade tulang direbus utk dptkan air rebusannya

cara2
daging di hiris nipis - diperap dgn sedikit minyak & sedikit maggi seasoning (klu xde guna kicap cair pun bole)
****daging bole direbus atau digoreng (saute) sebentar..(sy goreng jer)
rebus tulang dgn serbuk chinese 5 spice, kicap & kuib ayam/daging, masukkan daging yg dihiris (jika memilih merebus daging)
masukkan sayuran pilihan - masak hingga daging empuk (jika gunakan daging lembut x perlu lama merebusnya)
di kuali yg lain tumis bwg putih & halia - masukkan kedlm sop. tutup api dn sedia utk dimakan bersama mee. dihias dgn daun sop &bwg goreng.

mee leper goreng (fried flat noodles)

salam semua

x tau eh nak panggil  mee ape ni..mee leper bole kut
goreng cam biasa jer..mcm kita buat mee jugak...goreng ni masa nk beraya ke rumah mama jijah..pasal anak bujang x ikut beraya so saya preparekan mee utk joe di rumah. sebenarnya nak experiment rasa mee ni..coz hubby kata, mee jenis ni ade di jual ditempatnya..so dia nak tau rasanya ade pedar ke tak?.tapi memang sedap ler meenya...xde rasa pedar pun..mcm mee biasa & mee yg selalu kami makan kat kopitiam...

cuma caranya kena rendam dgn air panas dulu ..pastu baru ler di toskan &masak mcm biasa....

ASSALAM semua.....sejuk pepagi ni......ade 1 bakul baju nak disidai...hemmm klu ujan smpi ke petang hntr dobi ler utk pressing jawabnya......rasa mcm nk sambung tido jer ujan2 camni eh...
nway hari ni nk share karipap pusing, pusing pusing & pusing....psl dia bnyk pusingnya,,,,so kena tulis bnyk jgk ler..hampir pusing mata & pala membacanya eh...hehehe

teringin buat karipap pusing ni pasal tengok picture dari mazita ...terus nk buat..lama dah x pusing2 mata & pala buat karipap ni..teringat lak dulu klu arwah nenek buat karipap ni utk jualan..sambil mengajar bdk2 ngaji sambil tu arwah nenek mengelek karipap...multitask sungguh arwah nenekku...

6 sd makan tepung jagung
1 1/2 cwn tepung gandum
5 sd makan marjerin

satukan & jadikan doh marjerin - klu terlembut /lembik bole tmbhkan tepung sedikit demi sedikit


 4 cawan tepung gandum
1/2 cawan minyak panas (masak kejap / microwavekan sekejap)
air garam secukupnya

uli hingga menjadi doh yg licin, tmbhkan air garam sedikit demi sedikit., jika terlembut (lembik) tmbhkan tepung sedikit demi sedikit...uli hingga tepung x melekat di tangan

jadikan doh (sizenya besar sedikit dari doh marjerin tadi)


ambil doh tepung & masukkan doh marjerin kedalamnya..
jadikan satu doh ...(seal doh marjerin dgn doh tepung)



 gelekkan doh tadi hingga nipis seperti pic (b)
gulungkan & gelekan nipis & gulung lagi

 bila dah gulung potong lebih kurang 1cm tebal & bolelah di gelek perlahan utk dijadikan kulit karipap
 isikan inti (terserah inti pilihan masing2) & klim  (bole jg guna penerap utk dptkan size sekata) & digoreng hingga kekuningan
sy buat inti kentang
bahan2
4 biji kentang (size besar) - didiadu
2 sdB udang kering1 ulas bwg putih & 1 bwg besar - dikisar
2 sdB serbuk kari ikan
cara2
tumis bhn kisar & serbuk kari ikan
masukkan kentang , tambahkan air 1/2 cawan
masak hingga kentang empuk
perasakan dgn garam & gula
bila dah masak bole toskan utk dapatkan inti yg kurang berminyak

PUCUK UBI, TAHU & TEMPE cicah kuah kacang

hehehe tengok tajuk tu sikit ler punya panjang..x tau nak bagi tajuk ape...bole ler eh ...asal faham kan..kan kan...ekekekeke
sebenarnya menu ni adalah menu yg hubby mintak last day tempohari..smapi kat airport pun bole kata ...nyesal x tapau kuah kacang ...hehehe, then hari ni saya ulang tayang buat lauk utk ratah2..kak baby kata sedap makan dgn tahu...joey makan pun kata sedap..tapi saya tau nape dorang kata sedap...pasal x PEDASSS...hehehe nway ini adalah menu yg sempoi untuk cover rasa jelak bila asik makan ayammm kan?




tahu goreng, tempe goreng & pucuk ubi rebus..senangkan..utk lain2 tambahan bole ler ikut selera masing2


saya sharekan resipi kuah kacangnya

bahan2
1 1/2 cawan KACANG TANAH - digoreng
1 ulas bwg putih goreng
sedikit belacan - di goreng (sy x masukkan belacan )
10 biji cili api goreng - klu x nak pedas x yah masukkan
10 tangkai lada kering - dimasak kemudian dibilas & ditoskan
kicap manis secukupnya
sedikit air masak utk mengisar
1 sdB kicap pekat
garam gula secukupnya
air asam secukupnya
sedikit cekur
1 helai daun kunyit - hiris kasar

cara2
kisar kacang tanah & semua bahan - jgn terlalu bnyk nnt cair
perasakan dgn gula & garam & air asam secukupnya.

***walau pun semua bhn dh di masak - sy tetap masak sekejap kuah kcg nih supaya tahan lama

sesekali teringin jg ler paru ni..ikutkan mmg x bole mkn selalu....dn anak2 mmg x  bole makan ni..organ2 dalaman ,mmg x sesuai..tapi tuk mak budak & bapak budak..bole jer..dah ''kertu''kan...mmg daya ingatan x kuat pun..hehehe

400 gm paru
10 biji lada merah
10 biji cili padi
2 ulas bwg putih
1  biji bawang besar
sedikit halia
1 keping asam keping
minyak secukupnya
garam & gula secukup rasa
1 biji bwg besar hiris bulat

bhn utk direbus bersama paru
3 ulas bwg putih - ditumbuk kasar
5 ulas bwg merah - ditumbuk kasar
1 sd makan serbuk ketumbar
1 sd makan jintan kasar

cara2
Paru dibersihkan & direbus bersama bhn2nya - rebuskan hingga empuk
angkat dn ketepikan -  dihiris nipis & di perap sekejap dgn garam & kunyit
di goreng garing & ketepikan
Kisar cili merah, cili padi , bwg putih & bwg besar.
Panaskan sedikit minyak dn tumis bahan kisar, tumis & perasakan dgn garam & gula , masukkan asam keping (jika kering sngt tmbhkan sikit air). masukkan paru yg dh di goreng tadi, kacau serata.
Masukkan bwg besar hiris. tutup api & bolelah dihidang.
